Ingredients
- 1 bag of Cavendish Farms Pub Fries
- 1 cup of cooked peas
- 1 tablespoon of cilantro, roughly chopped
- 1 tablespoon of peanuts, roughly chopped
- 1 spring onion, roughly chopped
- 1 chicken breast, chopped into cubes
- 1 tablespoon of green curry paste
- 1 cup coconut milk
- ½ cup chicken broth
- 1 teaspoon of sugar
- 2 teaspoons of fresh lime juice
- Salt & pepper
- 1 tablespoon of olive oil
Directions
- Bake Cavendish Farms Pub Fries in an oven or air fryer according to package directions.
- In a saucepan, add the chicken breast and cook until golden brown. Remove the chicken from the pan and set aside.
- To the same saucepan, add in the green curry paste, coconut milk, chicken broth, peas and sugar and simmer for 5 minutes.
- Stir in lime juice after 5 minutes.
- Remove fries from the oven or air fryer and transfer to a plate.
