Cauliflower Steak with Pub Fries

While they’re delicious on their own, the thicker cut of these fries means they’re great for dipping in your favourite sauces. Serve them with specialty ketchups, aioli, curry mayo, or whatever you please.
Ingredients
- 1 package Cavendish Farms Restaurant Style Pub Fries
- 2 large heads of cauliflower
- 4 tbsp olive oil
- ¼ tsp sea salt
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp thyme (fresh or dried)
- ½ tsp paprika
- 1 cup cherry tomatoes, sliced in half
Directions
- In a small bowl, mix the following seasonings: garlic powder, onion powder, thyme, paprika, and sea salt.
- Prep the cauliflower by cleaning and removing leaves. Then slice the cauliflowers into ¾ to 1-inch thick steaks.
- Place the cauliflower steaks on a parchment-lined baking sheet.
- Rub each one with olive oil, and evenly coat each steak with the seasonings.
- Add the halved cherry tomatoes around the cauliflower on the baking sheet, then drizzle with olive oil and sprinkle on any leftover seasonings.
- Bake cauliflower 20-25 minutes, carefully flipping at the halfway point.
- Prepare the Pub Fries according to the package instructions in the oven or an air fryer. Divide evenly into 4 portions and arrange in the center of the plates. Add 2 cauliflower steaks on top of the Pub Fries, and place tomatoes on top.
Ingredients
- ½ cup fresh parsley leaves
- ½ cup cilantro leaves
- 2 cloves garlic, minced
- ¼ teaspoon each salt + pepper
- 2 tbsp lemon juice
- ½ teaspoon lemon zest
- ⅓ cup olive oil
- 2-3 tbsp water (if the mixture is too thick)
Directions
- As the cauliflower is roasting, make the cilantro sauce.
- Put all sauce ingredients into either a food processor or blender.
- Blend on high until the ingredients are well combined.
- If the mixture is too thick, add 2-3 tablespoons of water and blend to thin it out.
- Drizzle the sauce over steaks/fries on the plate.
