Breakfast Poutine with Drive-Thru Fries

Ingredients
- 1 bag of Cavendish Farms Restaurant Style Drive-Thru Fries
- 4 eggs
- 1 tablespoon warm water
- 1 tablespoon fresh lemon juice
- ¾ teaspoon coarse salt
- ½ cup or 1 stick unsalted butter
- 1 tablespoon cooked bacon bits
- 1 cup cheese curds
- 1 green onion, thinly sliced
- Salt and pepper, to season
Directions
- Preheat air fryer to 400°F.
- Spread frozen fries in a single layer in air fryer basket and bake for 10 minutes. Flip fries halfway and bake for another 5- 10 minutes or until golden brown.
- Bring a large pot of water to a boil, then reduce the heat to low. Stir the water and create a vortex and slowly add 2 eggs in the middle of the vortex. Cook the egg for 4 minutes. Gently remove the eggs into an ice bath for 1 minute. Remove the eggs from the ice bath and set aside until ready to serve.
- To make the hollandaise sauce, in a blender, combine 2 egg yolks, water, lemon juice and salt, and blend until frothy.
- Heat butter in the microwave or in a small saucepan over medium until bubbly (do not let brown). With blender running, pour in hot butter in a very thin stream, blending until sauce is thick and emulsified.
- To serve, place cooked Cavendish Farms Restaurant Style Drive-Thru Fries in a bowl and add the 2 poached eggs. Top with hollandaise sauce, cheese curds, bacon bits and green onion. Enjoy!
