Black Bean and Avocado Toast with Hash Brown Waffle Fries

Ingredients

  • 1 bag of Cavendish Farms Hash Brown Waffle Fries
  • 1/2 cup chopped red onions
  • 1/2 a large avocado, sliced
  • 1/2 cup sour cream
  • 1 ½ tablespoons dijon-style prepared mustard
  • 1 tablespoon lemon juice
  • 2 teaspoons chopped fresh dill
  • 1 (16 oz) can black beans
  • 1/4 cup chopped cilantro

Directions

  1. Cook hash brown waffle fries as directed.
  2. Rinse and drain black beans.
  3. Dice red onion and cilantro.
  4. Combine sour cream, mustard, lemon juice and dill to create dill sauce.
  5. Top your hash brown waffle fries with dill sauce, black beans, red onion, avocado and cilantro.
