Mini Hash Brown Healthy Breakfast

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Mini Quick Cook Patties
  • 1 ripe avocado, thinly sliced
  • 3 eggs
  • 1 tablespoon of butter
  • 1 tablespoon olive oil
  • 1 cup of spinach
  • 1 cup of tomatoes on the vine
  • 1 tablespoon of toasted sesame seeds
  • Salt and pepper, to season

Directions

  1. Preheat air fryer to 400°F.
  2. Fill air fryer basket with a single layer of frozen hash browns and cook according to package instructions. Lay aside.
  3. Drizzle olive oil on the tomatoes on the vine, fill pre-heated air fryer basket and cook tomatoes for 10 minutes and remove from air fryer.
  4. In a medium bowl, crack the eggs and whisk until the yolk and whites are thoroughly combined. In a pre-heated medium size pan, melt butter into the pan and pour in the egg mixture.
  5. Let the egg cook for a few seconds undisturbed, then slowly form large soft curds of scrambled eggs. Remove the eggs from the pan once the eggs set.
  6. In the same well heated pan, add olive oil and spinach. Season with salt and pepper and remove once cooked.
  7. To assemble, add cooked Cavendish Farms All-Day Breakfast Mini Quick Cook Patties, roasted tomatoes on the vine, scrambled eggs, cooked spinach and thinly sliced avocados.
  8. Garnish with some toasted sesame seeds and serve!
