Green Goddess Salad with Waffle Fries

Ingredients

  • 1 bag of Cavendish Farms Restaurant Style Waffle Fries
  • 1 small head green cabbage, chopped into cubes
  • 1 cucumber, chopped into cubes
  • ¼ cup chives, roughly chopped
  • 1 green onion, roughly chopped
  • 1 cup basil leaves
  • 1 cup fresh spinach
  • 2 cloves garlic
  • 1 small shallot
  • 2 lemons, juiced
  • ¼ cup olive oil
  • ¼ cup cashew nuts
  • 1/3 cup nutritional yeast
  • 1 teaspoon salt
  • 2 tablespoons rice vinegar
  • Salt & pepper, to season

Directions

  1. Preheat air-fryer to 400°F.
  2. Spread frozen Waffle Fries in a single layer in air-fryer basket and cook according to packaging instructions.
  3. In a large salad bowl, add chopped green cabbage, cucumber, chives, and green onions and set aside.
  4. To a blender, add basil leaves, fresh spinach, garlic, shallot, juice of 2 lemons, olive oil, cashew nuts, nutritional yeast, olive oil, salt, and rice vinegar. Blend until smooth.
  5. To large salad bowl, add in Green Goddess dressing and toss until vegetables are coated with dressing.
  6. Serve Green Goddess Salad with crispy Waffle Fries and enjoy!
