Ingredients
- 1 bag of Cavendish Farms Restaurant Style Waffle Fries
- 1 small head green cabbage, chopped into cubes
- 1 cucumber, chopped into cubes
- ¼ cup chives, roughly chopped
- 1 green onion, roughly chopped
- 1 cup basil leaves
- 1 cup fresh spinach
- 2 cloves garlic
- 1 small shallot
- 2 lemons, juiced
- ¼ cup olive oil
- ¼ cup cashew nuts
- 1/3 cup nutritional yeast
- 1 teaspoon salt
- 2 tablespoons rice vinegar
- Salt & pepper, to season
Directions
- Preheat air-fryer to 400°F.
- Spread frozen Waffle Fries in a single layer in air-fryer basket and cook according to packaging instructions.
- In a large salad bowl, add chopped green cabbage, cucumber, chives, and green onions and set aside.
- To a blender, add basil leaves, fresh spinach, garlic, shallot, juice of 2 lemons, olive oil, cashew nuts, nutritional yeast, olive oil, salt, and rice vinegar. Blend until smooth.
- To large salad bowl, add in Green Goddess dressing and toss until vegetables are coated with dressing.
- Serve Green Goddess Salad with crispy Waffle Fries and enjoy!
