French Fry Frittata

Ingredients

  • 1 bag of Cavendish Farms Restaurant Style Pub Fries
  • 8 Eggs
  • 1/4 Cup Cream or Milk
  • 1/2 Cup Cheese (Your Choice)
  • 1/4 tsp Salt & Pepper
  • Cherry Tomatoes
  • Head of Broccoli
  • 2 Tbsp Feta Cheese
  • 2 Tbsp Fresh Chopped Green Onion

Directions

  1. Pre-heat oven to 450°F (230°C).
  2. Spread Cavendish Farms Restaurant Style Pub Fries in a single layer on a non-stick baking sheet and bake for 10 minutes. Flip fries and continue baking for 5 to 10 minutes to a light.
  3. Prepare and dice all vegetables.
  4. Meanwhile, combine 8 eggs, 1/4 cup cream or milk, 1/2 cup of cheese (your choice), and 1/4 teaspoon of salt and pepper.
  5. In a cast-iron skillet or oven-safe stainless steel pan, add two cups of leftover fries.
  6. Remove fries from oven once done.
  7. Pour egg base over the fries and veggies, and bake at 400°F for 15 to 20 minutes or until the egg mixture is set.
  8. Sprinkle with chopped green onion and feta cheese.
  9. Enjoy!
