Shakshuka with Hash Brown Sticks

Ingredients

  • 1 bag Cavendish Farms Hash Brown Sticks or Bites
  • 6 large Eggs
  • 400 ml can Fire Roasted Tomatoes
  • 400 ml can Whole Plum Or Roma Tomatoes
  • 1 medium Spanish Onion, diced
  • 4 cloves Garlic, minced
  • 1 medium Bell Pepper, diced
  • ¼ cup Olive Oil
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • ½ tsp Chili Flakes
  • To taste Salt & Pepper
  • As needed Whole Cilantro Leaves for garnish

Directions

  1. Preheat oven to 450°F. Bake Cavendish Farms hash brown sticks (or bites) according to package directions.
  2. Once Cavendish Farms hash brown sticks (or bites) are finished baking, reduce oven heat to 350°F.
  3. Over medium heat in a large, oven safe, sauté pan, add olive oil and sweat onion and garlic until tender.
  4. Add spices and diced bell pepper, cook for additional 1-2 minutes.
  5. Add cans of whole Plum and Fire roasted tomato, simmer for 5 minutes on medium heat.
  6. Add salt and pepper to taste.
  7. Crack eggs directly into the tomato mixture, approximately 1-2 inches apart.
  8. Place frying pan directly into 350°F oven and bake for 10 – 15 minutes.
  9. Remove and garnish with fresh cilantro leaves.
  10. Serve Shakshuka hot with Cavendish Farms Hash brown sticks (or bites) on the side.
