Shakshuka with Hash Brown Sticks

Ingredients
- 1 bag Cavendish Farms Hash Brown Sticks or Bites
- 6 large Eggs
- 400 ml can Fire Roasted Tomatoes
- 400 ml can Whole Plum Or Roma Tomatoes
- 1 medium Spanish Onion, diced
- 4 cloves Garlic, minced
- 1 medium Bell Pepper, diced
- ¼ cup Olive Oil
- 1 tsp Smoked Paprika
- 1 tsp Ground Cumin
- ½ tsp Chili Flakes
- To taste Salt & Pepper
- As needed Whole Cilantro Leaves for garnish
Directions
- Preheat oven to 450°F. Bake Cavendish Farms hash brown sticks (or bites) according to package directions.
- Once Cavendish Farms hash brown sticks (or bites) are finished baking, reduce oven heat to 350°F.
- Over medium heat in a large, oven safe, sauté pan, add olive oil and sweat onion and garlic until tender.
- Add spices and diced bell pepper, cook for additional 1-2 minutes.
- Add cans of whole Plum and Fire roasted tomato, simmer for 5 minutes on medium heat.
- Add salt and pepper to taste.
- Crack eggs directly into the tomato mixture, approximately 1-2 inches apart.
- Place frying pan directly into 350°F oven and bake for 10 – 15 minutes.
- Remove and garnish with fresh cilantro leaves.
- Serve Shakshuka hot with Cavendish Farms Hash brown sticks (or bites) on the side.
