Mini Hash Browns with Egg White Bites

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Mini Quick Cook Hash Brown Patties
  • 6 egg whites
  • 2 cups fresh spinach
  • 1 cup mushroom
  • 2/3 cup Swiss cheese
  • 2 tablespoon olive oil
  • Salt & pepper, to season
  • Fruit, of choice

Directions

  1. Preheat air fryer to 400°F. 
  2. Spread Mini Hash Browns in air fryer basket and cook according to packaging instructions.
  3. Preheat oven to 350°F.
  4. To a medium heat pan, add 1 tablespoon olive oil. Cook spinach and mushrooms for 3 - 4 minutes or until wilted. Season with salt and pepper and set aside.
  5. To a 6-cup muffin pan, add 1 tablespoon olive oil, and coat each tin.
  6. Evenly divide the spinach, shredded cheese, and mushrooms into 6 muffin tins. Pour the egg whites over the spinach, mushrooms, and cheese. Season with salt and pepper and set aside.
  7. Bake Egg White Bites in pre heated oven for 12 minutes or until they are cooked through.
  8. Serve the Egg White Bites, cooked Mini Hash Browns and sliced strawberries, and enjoy!
