Mini Hash Browns with Egg White Bites

Ingredients
- 1 bag of Cavendish Farms All-Day Breakfast Mini Quick Cook Hash Brown Patties
- 6 egg whites
- 2 cups fresh spinach
- 1 cup mushroom
- 2/3 cup Swiss cheese
- 2 tablespoon olive oil
- Salt & pepper, to season
- Fruit, of choice
Directions
- Preheat air fryer to 400°F.
- Spread Mini Hash Browns in air fryer basket and cook according to packaging instructions.
- Preheat oven to 350°F.
- To a medium heat pan, add 1 tablespoon olive oil. Cook spinach and mushrooms for 3 - 4 minutes or until wilted. Season with salt and pepper and set aside.
- To a 6-cup muffin pan, add 1 tablespoon olive oil, and coat each tin.
- Evenly divide the spinach, shredded cheese, and mushrooms into 6 muffin tins. Pour the egg whites over the spinach, mushrooms, and cheese. Season with salt and pepper and set aside.
- Bake Egg White Bites in pre heated oven for 12 minutes or until they are cooked through.
- Serve the Egg White Bites, cooked Mini Hash Browns and sliced strawberries, and enjoy!
