Kale Caesar with Sweet Potato Fries

Ingredients

  • 1 bag of Cavendish Farms Flavour Crisp Sweet Potato Straight Cut Fries
  • 1 bunch of kale, roughly chopped
  • 1 cup grated Parmesan cheese
  • 1 chicken breast, sliced
  • 2 small garlic cloves, finely minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 cup mayonnaise
  • Salt & pepper to taste

Directions

  1. Cook Cavendish Farms Sweet Potato Straight Cut Fries in an oven or air fryer according to package directions.
  2. In a bowl, whisk together garlic, lemon juice, Dijon mustard, Worcestershire sauce and mayonnaise until well combined. Add salt & pepper to taste.
  3. In a pan, add sliced chicken breast and season with salt & pepper. Cook chicken until well done.
  4. Add chopped kale into a large bowl, drizzle Caesar dressing and toss until evenly coated.
  5. Garnish kale Caesar salad with sliced chicken breast and Parmesan cheese. Serve with a side of Cavendish Farms Sweet Potato Fries.
