Fish & Oven Chip Bites

Ingredients

  • 1 bag of Cavendish Farms Classic Oven Chips
  • 2 haddock filets, cut into 1/2 oz portions
  • 1 pkg. of coleslaw mix
  • 1 cup of coleslaw dressing
  • 3 tbsp. tartar sauce
  • 1 cup of panko
  • 1 cup of all purpose flour
  • 2 tbsp. fresh dill
  • 2 eggs, beaten with 2 tbsp. of water
  • 3 tbsp. vegetable oil
  • 1/2 tbsp. salt and pepper, to taste

Directions

Fish Bites

  1. Place shredded coleslaw into a bowl and mix well with the dressing, set aside
  2. Place eggs, flour, and Panko into 3 separate shallow bowls
  3. Preheat skillet over medium heat
  4. Working in batches dredge the fish into the flour, shake off excess and add into the egg. Shake off excess and transfer to the panko, coating well
  5. Add enough oil to cover the bottom of the pan and carefully add fish without overcrowding
  6. Cook for approximately 2 minutes per side, or until golden brown and cooked through
  7. Remove from pan and place on paper towel to absorb the excess oil. Season with Salt and Pepper
  8. To assemble, place a spoonful of Coleslaw on each Oven Chip, followed by a piece of Haddock
  9. Finish with a dollop of Tartar Sauce and fresh dill for garnish
