Crispy Smashed Potato Tot Salad

Ingredients
- 1 bag of Cavendish Farms Quick Crisp Potato Tots
- 3 tbsp fresh chives
- ¼ cup fresh dill
- 3 tbsp fresh parsley
- ½ red onion
- 1 clove garlic
- 1 mini cucumber
- 1 lemon
- ½ cup mayonnaise
- ¼ cup Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp wholegrain mustard
- Salt & pepper, to season
Directions
- Preheat air fryer to 400°F.
- Spread Potato Tots in a single layer in air fryer basket and cook according to packaging instructions.
- To prep, roughly chop fresh chives, dill, parsley, red onion, garlic and mini cucumber and set aside.
- Remove cooked Potato Tots from air fryer and set on a parchment paper. Smash Potato Tots with a cup and add to air fryer basket and cook until crispy and golden brown and set aside.
- To a large mixing bowl, add lemon juice, mayonnaise, Greek yogurt, Dijon mustard, wholegrain mustard, chopped garlic, dill, parsley, chives, cucumber, red onion, salt and pepper. Mix until well combined and set aside.
- Toss cooked smashed Potato Tots into salad dressing and mix well.
- Garnish Potato Salad with remaining fresh dill and enjoy!
