Ancient Grain Jar Salad with Diced Hash Browns

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Diced Hash Browns
  • 1 cup cooked quinoa
  • 1 cup romaine lettuce, roughly chopped
  • ½ cup carrots, diced
  • ½ cup green apple, diced
  • 1/3 cup crumbled feta
  • ½ cup olive oil
  • 2 tablespoon lemon juice
  • 1 tablespoon honey
  • 1 teaspoon dried dill
  • Salt & pepper, to season

Directions

  1. Preheat air-fryer to 400°F.
  2. Spread frozen Diced Hash Browns in a single layer in air-fryer basket and cook according to packaging instructions.
  3. To a mason jar, add diced carrots at the bottom, followed by green apple, feta, quinoa, and romaine lettuce and set aside.
  4. To make the dressing, in a small bowl, whisk together olive oil, lemon juice, honey, dill, salt and pepper and set aside.
  5. When ready to serve, add salad into a bowl and drizzle homemade dressing on top.
  6. Garnish salad with Diced Hash Browns and enjoy!
