BBQ Jackfruit Hash Brown Waffles

Hash Brown Waffles
One part hash brown. One part waffle. All parts delicious! These hash brown waffles make breakfast so irresistible that you’ll crave them all day and all night. Serve them in the morning with a side of your favourite breakfast foods, snack on them in the afternoon, or switch up your dinner routine by subbing these in for your usual fries. Made in Canada from domestic and imported ingredients.
Ingredients
- 1 bag of Cavendish Farms All- Day Breakfast Hash Brown Waffles
- 2 chipotle peppers in adobo sauce, finely chopped
- 1 tbsp adobo sauce
- 1/2 cup ketchup
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 can jackfruit in brine, drained and shredded
- 1 cup purple cabbage, shredded
- 1/2 cup cilantro, chopped
- 1/2 tbsp lime juice
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 lime, cut into wedges
Directions
- Preheat air fryer to 400°F.
- Spread frozen Hash Brown Waffles in a single layer in air fryer basket and cook according to packaging instructions.
- To prep, combine the chipotle peppers, adobo sauce, ketchup, vinegar, and Dijon mustard in a saucepan over medium heat. Simmer for 5 minutes.
- Add the drained and shredded jackfruit to the BBQ sauce, stirring well to coat. Simmer for another 10 minutes until the jackfruit is tender.
- For the slaw, combine the shredded purple cabbage, cilantro, lime juice, olive oil and pinches of salt and pepper in a mixing bowl.
- Place a spoonful of BBQ jackfruit onto each cooked Hash Brown Waffle and top generously with slaw. Garnish with lime wedges.
