Tomato Soup with Mini Hash Browns

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Mini Quick Cook Patties
  • 1 can of crushed tomatoes
  • 4 cloves of garlic, finely minced
  • 3 tablespoons olive oil
  • 1 red bell pepper, diced
  • 1 potato, diced
  • 3 tablespoons tomato paste
  • 4 cups vegetable broth
  • 1 cup of fresh basil leaves, roughly torn
  • Salt and pepper, to season

Directions

  1. Preheat air fryer to 400°F.
  2. Fill air fryer basket with a single layer of frozen hash browns and cook according to packaging instructions.
  3. In a medium well-heated pot or saucepan, add the onion, pepper and potato and cook for about 6-7 minutes. Add tomato paste into the pot and stir through. Add in vegetable broth and bring the mixture to a boil.
  4. Reduce heat to low and simmer soup for 15 minutes or until potato is tender. Add tomatoes, garlic to the soup and simmer for 2 more minutes.
  5. Blend soup using an immersion blender and blend until smooth and set aside.
  6. To serve, add the creamy tomato soup in a bowl and garnish with basil leaves. Add crispy Cavendish Farms All-Day Breakfast Mini Quick Cook Patties on the side and serve.
