Roasted Vegetable Salad with Potato Tots

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • ¼ cup balsamic vinegar
  • 1 tsp honey
  • 2 tsp Dijon mustard
  • 6 tbsp olive oil
  • ¼ cup roasted butternut squash
  • ¼ cup roasted Brussels sprouts
  • ¼ cup roasted pepper
  • ¼ cup roasted asparagus
  • 2 cups salad greens of choice
  • ¼ cup feta, crumbled
  • Salt & pepper, to garnish

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Potato Tots in an air fryer basket and cook according to packaging instructions.
  3. To make salad dressing, to a small bowl, add balsamic vinegar, honey, Dijon mustard, olive oil, salt and pepper. Whisk until well combined and set aside.
  4. Heat up leftover butternut squash, Brussels sprouts, pepper and asparagus and set aside.
  5. To a large bowl, add salad greens. Top with butternut squash, Brussels sprouts, pepper, asparagus and cooked Potato Tots.
  6. Garnish with feta cheese and serve with a side of salad dressing.
