Roasted Vegetable Salad with Potato Tots

Ingredients
- 1 bag of Cavendish Farms Quick Crisp Potato Tots
- ¼ cup balsamic vinegar
- 1 tsp honey
- 2 tsp Dijon mustard
- 6 tbsp olive oil
- ¼ cup roasted butternut squash
- ¼ cup roasted Brussels sprouts
- ¼ cup roasted pepper
- ¼ cup roasted asparagus
- 2 cups salad greens of choice
- ¼ cup feta, crumbled
- Salt & pepper, to garnish
Directions
- Preheat air fryer to 400°F.
- Spread Potato Tots in an air fryer basket and cook according to packaging instructions.
- To make salad dressing, to a small bowl, add balsamic vinegar, honey, Dijon mustard, olive oil, salt and pepper. Whisk until well combined and set aside.
- Heat up leftover butternut squash, Brussels sprouts, pepper and asparagus and set aside.
- To a large bowl, add salad greens. Top with butternut squash, Brussels sprouts, pepper, asparagus and cooked Potato Tots.
- Garnish with feta cheese and serve with a side of salad dressing.
