Pulled Jerk Chicken with Drive Thru Fries

Ingredients

  • 1 cup chopped yellow onions
  • 1 habanero chili or scotch bonnet
  • ½ cup fresh cilantro
  • ½ cup mango juice (or orange juice)
  • 1 tbsp soy sauce
  • ½ tbsp white or apple cider vinegar
  • ½ tbsp dark brown sugar
  • ½ tbsp ground allspice
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper
  • ½ tsp fresh thyme leaves (from 2 to 3 sprigs), or 1 tsp dry

Directions

  1. Using a mixer, blender or a food processor, combine all the marinade ingredients and blend until smooth.

  • 1 package Cavendish Farms Restaurant Style Drive Thru Fries
  • 8 boneless, skinless chicken thighs
  • 1 cup (1 bunch) chopped scallions (for garnish)

Directions

  1. Prep the chicken: In a large bowl, toss the chicken in the marinade, then cover and chill in the fridge for at least 2 hours, preferably overnight.
  2. Preheat the oven to 375°F. Transfer the chicken and marinade to a large, covered baking dish and cook until the internal temperature reaches 170°F, approximately 25 to 30 minutes. Allow it to rest for few minutes, then, using two forks, shred the chicken in the liquid.
  3. Bake the Drive Thru Fries according to package instructions in the oven or an air fryer.
  4. Portion and place the pulled jerk chicken in the middle of the plates and top with a handful of baked Drive Through Fries.
  5. Use a spoon to collect the cooked leftover sauce from the pan and drizzle over fries and chicken.
  6. Sprinkle chopped scallions on top of fries.
