Power Bowl with Diner Style Hash Browns

Ingredients

  • 1 bag of Cavendish Farms Restaurant-Style Diner Style Hash Browns
  • 1 shallot, thinly sliced
  • 2 cherry tomatoes, sliced in half
  • 1 lime, sliced into wedges
  • ½ bell pepper, roughly chopped
  • 1 tablespoon sour cream
  • 1 head of lettuce, roughly chopped
  • ¼ cup of kidney beans
  • ¼ cup of corn
  • ¼ cup of French beans, sliced in half
  • Green onion, roughly chopped

Directions

  1. Preheat oven to 450°F.
  2. Spread hash browns in a single layer on a baking tray, flipping halfway through.
  3. Once hash browns are fully cooked, add to a large bowl.
  4. Assemble the power bowl with lettuce, cherry tomatoes, bell pepper, kidney beans, corn, French beans and Cavendish Farms Diner Style Hash Browns.
  5. Garnish power bowl with sour cream, a wedge of lime, green onion and sunflower seeds.
