Potato Tot Casserole

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • 1 cup ground beef
  • 10 eggs
  • 1 cup milk
  • ½ cup sour cream
  • 1 green onion
  • 1 red pepper
  • 2 cup shredded cheese of choice
  • 1 tablespoon olive oil
  • Salt & pepper, to season

Directions

  1. Preheat oven to 350°F.  
  2. To prep, chop red pepper into small cubes, cut bacon into small chunks, and roughly chop green onion and set aside.
  3. To medium heat pan, add ground beef and cook for 8 minutes or until ground beef is well done and set aside.
  4. In a large bowl, whisk together eggs, milk, sour cream, salt, and pepper until smooth. Stir in red pepper, 1 cup shredded cheese, cooked ground beef and green onion and set aside.
  5. In a 13 x 9” casserole dish, spread olive oil to coat the dish.
  6. Pour the egg mixture into the casserole dish evenly. Place Potato Tots on top of the egg mixture. Sprinkle remaining cheese on Potato Tots.
  7. Preheat air fryer to 400°F.
  8. Spread frozen Potato Tots in air fryer basket and cook according to packaging instructions.
  9. Bake egg mixture in pre heated oven for 15 minutes or until egg mixture is cooked through.
  10. To serve, garnish remaining green onion and cooked Potato Tots and enjoy!
