Ingredients
- 12 Cavendish Farms Mini Quick Cook Hash Brown Patties
- ¼ cup basil pesto
- 1 can tuna, drained and flaked
- ¼ cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1 large avocado, sliced
- 1 medium tomato, sliced
- Everything Bagel Seasoning, optional for garnish
Directions
- Cook Cavendish Farms Mini Quick Cook Hash Brown Patties in an oven or air fryer according to packaging directions.
- While the mini patties are cooking, prepare the tuna salad. In a mixing bowl, combine the drained and flaked tuna, mayonnaise, and lemon juice. Mix well and season with salt and pepper to taste.
- Once the mini patties are cooked to a light golden colour, remove them from the oven or air fryer and allow them to cool for a minute.
- To assemble each sandwich, start by spreading a layer of basil pesto on four of the mini patties. Top the pesto with a generous spoonful of tuna salad, spreading it evenly.
- Place a second mini patty on top of each tuna salad layer. Arrange avocado slices and tomato slices on top of the second mini patties, making sure to cover the surface evenly.
- Finish the sandwiches with the third mini patty, gently pressing down to help the layers adhere together. Skewers are also handy for keeping the sandwiches stacked together. Lightly sprinkle Everything Bagel Seasoning over the top mini patty of each sandwich and enjoy!
