Mini Hash Brown Avocado Toast

Ingredients

  • 1 bag of Cavendish Farms All-Day Breakfast Mini Quick Cook Hash Brown Patties
  • 1 ripe avocado
  • 1 red onion
  • 1 lemon
  • 1 cup pomegranate seeds
  • 1 tablespoon olive oil
  • ¼ cup feta cheese, crumbled
  • Salt & pepper, to season

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Mini Hash Browns in a single layer in air fryer basket and cook according to packaging instructions.
  3. In a bowl, mash up avocado. Season with salt and pepper and set aside.
  4. To prep, roughly chop red onion, and juice one lemon and set aside.
  5. To make pomegranate salsa, add pomegranate seeds, red onion, lemon juice, olive oil, salt and pepper to a small bowl. Mix well and set aside.
  6. Add cooked Mini Hash Browns to a serving platter. Top cooked Mini Hash Browns with avocado, pomegranate salsa and crumbled feta cheese. Add remaining pomegranate salsa in a small serving bowl and serve alongside Mini Hash Brown Avocado Toast!
