Greek Chicken Souvlaki with Wedges

Ingredients

  • 1 bag of Cavendish Farms Restaurant Style Kettle- Style Wedges
  • 500 g (1lb) chicken breast
  • ¼ cup olive oil
  • Bamboo skewers
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt & Pepper
  • 2 tablespoons of lemon juice

Directions

  1. Cook Cavendish Farms Kettle Style Wedges according to package directions.
  2. Chop the chicken breast into 11 bite sized chunks then place in a large bowl.
  3. Combine the olive oil, lemon juice, minced garlic, oregano, salt and pepper. Mix well and allow to marinate in the fridge for 2 hours.
  4. 30 minutes before cooking, soak bamboo skewers in boiling water. Cook Cavendish Farms Kettle-Style Wedges.
  5. When you are ready to cook the chicken, thread the chicken onto the soaked skewers. Preheat a grill until hot then cook the chicken for 3-4 minutes per side until golden brown all over and cooked through. Remove from the heat and allow to rest for 5 mins.
  6. Serve the cooked chicken souvlaki with your favorite Greek salad and some Kettle-Style Wedges on the side.
