Ingredients
- 1 cup plain Greek yogurt
- ¼ cup coconut cream (can substitute coconut milk depending on desired consistency)
- To taste, salt and pepper
- ½ tsp cumin powder (or roasted seeds)
- 1 Chili pepper, finely chopped
- ½ seedless cucumber, finely diced
- ¼ cup yellow onion, finely diced
- ½ tomato, finely diced, seeds removed
- 2 tbsp fresh mint and/or cilantro leaves, finely chopped
Directions
- Whisk together coconut cream, Greek yogurt, cumin, salt and pepper.
- Stir in the cilantro or mint, reserving some for garnish.
- Add finely diced tomatoes and cucumber into the mixture.
- Garnish with additional chopped cilantro, or mint, and finely chopped Chili pepper.
