Skin-On Diced Hash Browns

Ingredients
- 1 bag of Cavendish Farms Skin-On Diced Hash Browns
- 1 cup chorizo of choice
- 1 onion
- 2 cloves garlic
- 1 red pepper
- ¼ cup fresh chives
- 1 tbsp fresh jalapeño
- 8 eggs
- 1 cup milk
- 1 tbsp smoked paprika
- ½ tbsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese
- Salt & pepper, to season
Directions
- Preheat air fryer to 400°F.
- Spread Diced Hash Browns on baking sheet and cook according to packaging instructions.
- To prep, roughly chop onion, garlic, pepper, chorizo, chives and jalapeño and set aside.
- In a large mixing bowl, add eggs, milk, smoked paprika, cumin, chili powder and whisk until combined and set aside.
- In a medium- heat pan, cook chorizo, onion, pepper and garlic for 5 minutes or until veggies are translucent and chorizo is well done and set aside.
- To an oven- safe casserole dish, add cooked Diced Hash Browns, layer with cooked chorizo and veggies. Repeat this step until baking dish is full. Pour in the egg mixture and add shredded cheese on top.
- Bake casserole for 10 - 15 minutes in pre- heated air fryer oven or until cheese is melted through.
- Garnish with jalapeño and chives and enjoy while hot!
