Breakfast Tacos with Potato Tots

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • ¼ cup fresh parsley
  • 1 avocado
  • 2 eggs
  • 3 small white tortillas
  • 1 cup shredded cheese
  • 1 cup cooked bacon, roughly chopped
  • 1 cup pico de gallo of choice
  • Salt & pepper, to season

Directions

  1. Preheat air fryer to 400°F.
  2. Spread Potato Tots in a single layer in air fryer basket and cook according to packaging instructions.
  3. To prep, roughly chop fresh parsley and avocado and set aside. Whisk eggs in a small bowl, season with salt and pepper and set aside.
  4. In a medium- heat pan, add the whisked eggs and scramble until set but still moist. This should take 3 - 5 minutes.
  5. Place the white tortillas in a taco holder. Layer scrambled eggs, shredded cheese, cooked bacon, pico de gallo, avocado and cooked Potato Tots.
  6. Garnish with parsley and serve while hot!
