Breakfast Tacos with Potato Tots

Ingredients
- 1 bag of Cavendish Farms Quick Crisp Potato Tots
- ¼ cup fresh parsley
- 1 avocado
- 2 eggs
- 3 small white tortillas
- 1 cup shredded cheese
- 1 cup cooked bacon, roughly chopped
- 1 cup pico de gallo of choice
- Salt & pepper, to season
Directions
- Preheat air fryer to 400°F.
- Spread Potato Tots in a single layer in air fryer basket and cook according to packaging instructions.
- To prep, roughly chop fresh parsley and avocado and set aside. Whisk eggs in a small bowl, season with salt and pepper and set aside.
- In a medium- heat pan, add the whisked eggs and scramble until set but still moist. This should take 3 - 5 minutes.
- Place the white tortillas in a taco holder. Layer scrambled eggs, shredded cheese, cooked bacon, pico de gallo, avocado and cooked Potato Tots.
- Garnish with parsley and serve while hot!
