Waffle Fries

Ingredients
- 1 bag of Cavendish Farms Restaurant Style Waffle Fries
- 1/4 cup rice vinegar
- 2 tbsp water
- 1 tbsp sugar
- 1/2 tsp salt
- 1 cup carrots, julienned
- 1/2 cup mayonnaise
- 1-2 tablespoon sriracha, to taste
- 1 teaspoon lime juice
- 1/2 cucumber, thinly sliced
- 1/4 cup cilantro
Directions
- Preheat air-fryer to 400°F.
- Spread Waffle Fries in a single layer in air-fryer basket and cook according to packaging instructions.
- To prep, combine rice vinegar, water, sugar, and salt in a small saucepan over medium. Bring to a boil, stirring until sugar dissolves.
- Place julienned carrots in a heatproof bowl. Pour the hot brine over the carrots. Let cool to room temperature, about 15 - 30 minutes.
- For the sriracha mayo, mix mayonnaise, sriracha, and lime juice in a mixing bowl. Adjust spice to taste.
- Arrange cooked Waffle Fries on a serving platter. Top with pickled carrots, cucumber slices, and fresh cilantro. Drizzle with sriracha mayo!
