Banh Mi Style Waffle Fries

Ingredients

  • 1 bag of Cavendish Farms Restaurant Style Waffle Fries
  • 1/4 cup rice vinegar
  • 2 tbsp water
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 cup carrots, julienned
  • 1/2 cup mayonnaise
  • 1-2 tablespoon sriracha, to taste
  • 1 teaspoon lime juice
  • 1/2 cucumber, thinly sliced
  • 1/4 cup cilantro

Directions

  1. Preheat air-fryer to 400°F.
  2. Spread Waffle Fries in a single layer in air-fryer basket and cook according to packaging instructions.
  3. To prep, combine rice vinegar, water, sugar, and salt in a small saucepan over medium. Bring to a boil, stirring until sugar dissolves.
  4. Place julienned carrots in a heatproof bowl. Pour the hot brine over the carrots. Let cool to room temperature, about 15 - 30 minutes.
  5. For the sriracha mayo, mix mayonnaise, sriracha, and lime juice in a mixing bowl. Adjust spice to taste.
  6. Arrange cooked Waffle Fries on a serving platter. Top with pickled carrots, cucumber slices, and fresh cilantro. Drizzle with sriracha mayo!
