Baked Greek Feta Fries with Creamy Tzatziki

Ingredients

  • 1 bag of Cavendish Farms FlavourCrisp Straight Cut Fries
  • 1/2 cucumber, grated and drained
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill, chopped
  • 1 tbsp dried oregano
  • 1 tbsp parsley, chopped
  • 1/2 cup feta cheese, crumbled, divided
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 425°F.
  2. Spread Straight Cut Fries in a single layer on a non-stick baking sheet and cook according to packaging instructions.
  3. Meanwhile, make the tzatziki. Grate the cucumber and squeeze out any water. Then, in a bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dill. Season with salt and pepper to taste. Refrigerate until ready to serve.
  4. Toss cooked Straight Cut Fries in a large bowl with dried oregano, fresh herbs, and half of the feta cheese. Transfer to a serving plate.
  5. Top Straight Cut Fries with the remaining feta and serve with the creamy tzatziki!
