Bacon and Cheddar Potato Tot Egg Cups

Potato Tots

Ingredients
- 1 bag of Cavendish Farms Quick Crisp Potato Tots
- 6 slices bacon, cooked and crumbled
- ½ cup cheddar cheese, shredded
- 12 small or medium sized eggs
- Chives, chopped
- Salt and pepper, to taste
Directions
- Preheat oven to 450°F.
- Grease a 12-cup muffin tin. Place 3 Potato Tots in each muffin tin and cook according to packaging instructions. Use a spoon to press the cooked Potato Tots into the bottom and side to form a cup.
- Sprinkle cooked bacon and cheddar into each cup. Carefully crack one small egg on top of each. Season with salt and pepper.
- Bake for 10 minutes or until the egg whites are fully cooked.
- Serve with chopped chives and more crumbled bacon!
