Bacon and Cheddar Potato Tot Egg Cups

Ingredients

  • 1 bag of Cavendish Farms Quick Crisp Potato Tots
  • 6 slices bacon, cooked and crumbled
  • ½ cup cheddar cheese, shredded
  • 12 small or medium sized eggs
  • Chives, chopped
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 450°F.
  2. Grease a 12-cup muffin tin. Place 3 Potato Tots in each muffin tin and cook according to packaging instructions. Use a spoon to press the cooked Potato Tots into the bottom and side to form a cup.
  3. Sprinkle cooked bacon and cheddar into each cup. Carefully crack one small egg on top of each. Season with salt and pepper.
  4. Bake for 10 minutes or until the egg whites are fully cooked.
  5. Serve with chopped chives and more crumbled bacon!
