Curry Spiced Potato Wedges

1 bagFrom the Farm™ Wedges (750g)
2 tbspOlive Oil
2 tbspCurry Powder
1 tspCumin, and/or Coriander (preference)
1 pinchSalt
1 pinchPepper

Mint and Yogurt Dipping Sauce

1 cupPlain Greek Yogurt
½ eachCucumber, peeled, seeded and grated
¼ cupFresh Mint, finely chopped
2 tbspOrange Juice
¼ tspGarlic, minced
1 pinchSalt
1 pinchPepper


Mint and Yogurt Dipping Sauce

  1. In a medium mixing bowl, add yogurt, cucumber, mint, orange juice and garlic. 
  2. If desired, add salt and pepper as well. 
  3. Mix well with a spatula or whisk. 
  4. Dip can be made in advance and held in the refrigerator until needed. 
  5. Serve when needed.

Curry Spiced Wedges

  1. Preheat oven to 450° F. 
  2. Bake From the Farm™ Wedges for 8 minutes. Turn-over and bake another 8 minutes or until desired crispness. 
  3. In a mixing bowl, place the wedges and top with olive oil. Toss gently. 
  4. Add curry powder (cumin or coriander) and salt and pepper. Mix gently ensuring all potatoes are covered. 
  5. Place coated potatoes back in to the oven and cook for 2 minutes. Flip and cook for another 2 minutes; or until desired doneness. 
  6. Remove then plate and serve with dip.
