Mucho Potato Nachos

½ pkgTMSimply Homestyle™ Harvest Fresh Wedges
1 TbspOlive or Vegetable oil
1 TbspTaco Seasoning
2 cupsLean Ground Beef
3/8 cupSalsa or Pico de Gallo
½ tspSalt
½ cupTomato, diced
2 TbspGreen Onions, chopped
1 TbspBlack Olives, sliced
3/8 cupSour Cream
8 SlicesFresh Jalapeno, optional
1½ cupLettuce, shredded, optional



  1. In a mixing bowl, combine the Simply Homestyle™ Harvest Fresh Wedges, oil and taco seasoning and stir to coat all potatoes well. 
  2. Heat oven to 450°F. Place potatoes in single layer on a non-stick baking sheet. Bake for 12 minutes, turn, and bake another 8 to 12 minutes or until desired crispness.
  3. Cook ground beef in a large non-stick skillet or frying pan until browned (about 8 minutes). Drain grease and stir in salsa and salt.
  4. To serve divide potatoes evenly onto plates. Top each serving of potatoes with equal amounts of the meat mixture and the toppings.
