|1 Tbsp||Olive Oil|
|1 cup||Chicken, cut into small cubes|
|½ cup||Onion, chopped|
|½ cup||Bell Pepper, chopped|
|¼ pkgTM||Simply Homestyle™ Hearty Red Skin Diced|
|1¾ cup||Chicken Broth|
|3 tsp||Cajun Seasoning|
|1 Tbsp||All-Purpose Flour|
|1¾ cup||Tomato, chopped|
|1 each||Topping (Tea Biscuit), optional|
Heat oil in a large non-stick skillet or frying pan over medium heat. Add chicken, onion and green pepper. Cook, stirring occasionally, until chicken is cooked through (about 6 minutes).
Add Simply Homestyle™ Hearty Red Skin Diced, broth and Cajun seasoning. Bring to a boil. Reduce heat to low. Cook 20 to 25 minutes, stirring occasionally, until potatoes are tender.
In small bowl, add flour and water and mix thoroughly until smooth. Slowly add mixture to the pan while stirring.
Stir in tomatoes. Cook until mixture is thickened and heated through.
