1 cup Simply Homestyle Hearty Red Skin Diced
1 TbspButter
2 TbspOnions, chopped
¼ cupBell Peppers, chopped
3Eggs, beaten
1 sliceCheddar Cheese
PinchSalt, to taste
PinchPepper, to taste
3/8 cupSalsa, optional
2 tspFresh Chopped Parsley, optional



  1. Melt butter in a large non-stick skillet or cast iron skillet on medium heat.
  2. Add Simply Homestyle Hearty Red Skin Diced, onions and peppers.
  3. Cook for about 10 minutes, stirring occasionally, until onions are soft and potatoes are browned.
  4. Add eggs and stir.
  5. Add cheese.
  6. Turn off heat and let sit for 30 - 60 seconds.
  7. Stir again before serving.
