|4 cups||Cavendish Farms Straight Cut Potatoes, prepped|
|½ cup||corn, chopped|
|¼ cup||green onion, chopped|
|¼ cup || fresh parsley, chopped|
|1 tsp||cajuns spices|
|2 tbsp ||sour cream|
|½ cup||all purpose flour|
|2 tbsp||butter or vegetable oil|
1.Slowly place Cavendish Farms® Straight Cut Potatoes in the food processor and allow them to mix for 2-3 minutes until the potatoes become a bread crumb like consistency. Remove from food processor and place in the mixing bowl.
2.Add the corn, green onion, salt, pepper, Cajun spice and sour cream and blend together.
3.Take about a half cup of mixture and shape into a disc or rondelle shape.
4.Repeat with the remainder of the mixture.
5.Dredge each cake in the flour and set aside.
6.Place butter in a frying pan on the stove over medium heat.
7.Place croquettes in frying pan and cook for 2½-3 minutes per side.
8.Remove from pan and serve.
9.Optional: serve with butter and/or sour cream or another sauce such as chipotle ranch.
