Crispy Potato Nacho Salad

3 cupsCavendish Farms Hash Brown Bites
2large boneless chicken breasts
1tbspCajun spice
6 cupspreferred lettuce mixture
8grape tomatoes
¼ cupcorn kernels
¼ cupblack beans
¼ cupsautéed onions, prepped
¼ cupsautéed red & green peppers, prepped
¼ cupsshredded cheddar cheese
½ cuppreferred dressing


  1. Preheat oven to 450°F.
    2.Place Cavendish Farms® Golden Crowns single layer on a non-stick baking sheet.
    3.Place in oven and cook for 6-8 minutes.
    4.Flip and cook for another 6-8 minutes or until desired doneness.
    5.Season chicken breast with Cajun spice and place on the BBQ for 3-4 minutes per side or until fully cooked, reaching a minimum internal temperature of 160°F.
    6.Place salad mixture into mixing bowl, add dressing and toss well.
    7.Divide salad mixture evenly on to two serving plates (or into tortilla bowls).
    8.Top with shredded cheddar, tomato, corn and black beans.
    9.Add sautéed onions and peppers and then garnish with Golden Crowns.
    10.Serve any remaining Golden Crowns as side dish.
