Loaded Lobster Sweet Potato Fries

1 bagFlavourCrisp Sweet Potato Fries
1½ cups     lobster meat, fresh or canned, 1"pieces
 ¾ cup     tomato, diced
 ¼ cup     chives, finely cut
2 tspgarlic
2 tspfresh parsley
2 tspbutter
 ¾ cupalfredo sauce
2 pinchessalt
2 pinchespepper


  1. Pre-heat oven to 450˚F.
    2.Place FlavourCrisp Sweet Potato Fries single layer on a non-stick baking sheet and place on the center rack for 12 minutes.
    3.Turn fries and cook for another 7 minutes or until desired doneness. Remove and season with salt.
    4.Place a non-stick frying pan on the stove top over medium heat and add the butter, half of the tomatoes and half of the chives; and cook for 2 minutes.
    5.Add lobster and garlic and cook for another 1 minute.
    6.Add Alfredo sauce, pepper and remaining lobster pieces and/or juice; and cook for another 1 to 2 minutes allowing the sauce to heat thoroughly.
    7.Place sweet potato fries in a serving vessel.
    8.Top fries with the lobster meat first and then slowly add the sauce over the fries.
    9.Garnish with the fresh parsley and the remaining tomato and chives.
