Grilled Steak Fajitas

Ingredients
Fajitas
2lbsstriploin, blade or flank steak
1tsp     chipotle, dried
1tspolive oil
1onion, diced
1red bell pepper, jullienned
126-inch flour tortillas
½ cupcheddar cheese, shredded
  
Marinade
1 cupsoy sauce
1½ cuppineapple juice
1tbspground cumin
1½ tspfresh garlic, minced
3 tbsplime juice
  
Cilantro Cream Sauce 
½ cupsour cream
1green onion, chopped
2 tsplime juice
¼ tsppepper
1/8 cup cilantro
  
For Serving
2 cupsRestaurant Style Diner Style Hash Brown Potatoes
1 containersalsa
1 containerguacamole

 


Directions
  1.  Combine marinade ingredients and steak in a large zip-lock bag or container with lid. Marinate in refrigerator overnight.
    2.To make cilantro cream sauce: combine sour cream, cilantro, green onion, lime juice, salt and pepper. Put aside.
    3.To prepare the fajitas, preheat grill or broiler on high. Cook marinated steak until medium rare. Slice the steak into thin strips.
    4.Heat olive oil on high in a large non-stick skillet or frying pan. Add onions until tender and then add peppers to pan, stirring constantly. Add chipotle and remove from heat.
    5.Arrange grilled steak strips, sautéed vegetables, tortillas and Diner Style Hash Brown Potatoes on each individual plate. Serve with salsa, cilantro cream sauce, guacamole and shredded cheese.
